Coleslaw Ingredients

  • 14 oz 14 oz (400 g) bag 3-color coleslaw mix
  • 1 large 1 large apple, chopped (preferably Honeycrisp or Fuji) Choose apples with a sweet flavor.
  • ½ cup ½ cup (75 g) dried cranberries
  • ½ cup ½ cup (60 g) chopped walnuts Can be substituted with sunflower seeds or pumpkin seeds.
  • 4 pieces 4 green onions, sliced

Dressing Ingredients

  • ¾ cup ¾ cup (180 ml) mayo
  • ¾ cup ¾ cup (180 g) plain yogurt or sour cream Choose one based on preference.
  • ¼ cup ¼ cup (85 g) honey Adjust sweetness to taste.
  • ¾ tsp ¾ tsp (2 g) dried ground ginger

Instructions

Preparation

  • In a large bowl, combine the coleslaw mix, chopped apple, dried cranberries, walnuts, and sliced green onions. Toss them together gently to mix well.
  • In a separate smaller bowl, whisk together the mayo, yogurt (or sour cream), honey, and ground ginger until the mixture is smooth and creamy.
  • Pour the dressing over the coleslaw mixture and toss everything together until all the ingredients are evenly coated.
  • For a lighter version, feel free to reduce the amount of mayo and yogurt to your liking.
  • Serve immediately for a fresh crunch or refrigerate for at least 30 minutes to let the flavors meld beautifully.

Notes

Serve in a large bowl or individual cups. Garnish with walnuts or cranberries for flair. Pairs well with grilled chicken or BBQ dishes. Consider adding lemon or lime juice for a zesty kick, and mix in additional veggies for more color.
