Coleslaw Ingredients

  • 400 g 14-ounce bag 3-color coleslaw mix
  • 1 large apple, chopped Crisp varieties like Granny Smith or Honeycrisp work best
  • 75 g dried cranberries
  • 60 g chopped walnuts
  • 4 pieces green onions, sliced

Dressing Ingredients

  • 180 ml mayonnaise
  • 180 g plain yogurt or sour cream
  • 85 g honey
  • 3/4 teaspoon dried ground ginger

Instructions

Preparation

  • In a large bowl, combine the coleslaw mix, chopped apple, dried cranberries, chopped walnuts, and sliced green onions.
  • In a smaller bowl, prepare the dressing by mixing together the mayonnaise, yogurt or sour cream, honey, and ground ginger. Stir until everything is well combined.
  • Pour the dressing over the coleslaw mixture and stir until all the ingredients are evenly coated.
  • If you prefer a less creamy version, you can adjust the dressing by using 1/2 cup mayonnaise, 1/2 cup yogurt, 3 tablespoons honey, and 1/2 teaspoon ginger.
  • For best results, let the coleslaw sit in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.

Serving

  • Serve the coleslaw chilled in a large salad bowl or on a platter, garnished with extra green onions or walnuts.

Notes

For extra crunch, add the dressing just before serving. You can also enhance the flavor with fresh lemon juice or zest. Mix in other colorful veggies like bell peppers or carrots for added nutrition.
