Muffin Base

  • 190 g all-purpose flour For the muffin base
  • 100 g granulated sugar

  • 1 large egg
  • 120 ml milk Approximately ½ cup
  • 60 g unsalted butter, melted For the muffin base
  • 5 ml vanilla extract Approximately 1 teaspoon
  • 150 g medium apple, chopped Approximately 1 cup

Streusel Topping

  • 65 g all-purpose flour
  • 50 g packed light brown sugar
  • 1 g ground cinnamon Approximately ¼ teaspoon
  • 60 g unsalted butter, cold and cut into small pieces

Instructions

Preparation

  • Preheat your oven to 190°C (375°F). Line a 12-cup muffin pan with paper liners.
  • In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, ground cinnamon, and salt until well combined.
  • In a separate medium bowl, whisk together the egg, milk, melted butter, and vanilla extract until blended.
  • Pour the wet mixture into the dry ingredients. Stir gently until just moistened; do not overmix.
  • Fold in the chopped apples carefully.

Streusel Topping

  • In a small bowl, combine the flour, brown sugar, and cinnamon for the streusel topping.
  • Use a pastry blender or your fingertips to cut in the cold butter until the mixture resembles coarse crumbs.

Baking

  • Divide the muffin batter evenly among the 12 muffin cups, filling them to the top.
  • Sprinkle the streusel topping generously over each muffin.
  • Bake in the preheated oven for 18-22 minutes, or until a skewer inserted into the center comes out clean.
  • Allow the muffins to cool in the pan for a few minutes, then transfer them to a wire rack to cool completely.
