Instructions

Preparation

  • Preheat the oven to 350°F (175°C). Grease an 8x8 or 9x9 baking pan and line it with parchment paper.
  • In a mixing bowl, whisk together the eggs, applesauce, oil or melted butter, maple syrup (or honey), vanilla, and milk until well combined.
  • In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
  • Gently combine the wet and dry ingredients. Stir until just mixed; do not overmix.
  • Fold in the chopped apples, ensuring they are evenly distributed.

Baking

  • Pour the batter into the prepared baking pan and bake for approximately 35-40 minutes, or until the center springs back and a toothpick comes out with a few moist crumbs.
  • Allow to cool in the pan before slicing.

Notes

This cake is even better the next day as the flavors meld.
