Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners, spritzing with oil if desired.
  • In a bowl, mash the banana until mostly smooth, leaving a few tiny lumps.
  • Whisk in the eggs, Greek yogurt, vanilla, and sweetener if using.
  • Sprinkle in the protein powder, flour, baking powder, cinnamon, and salt, stirring until just combined.
  • Fold in the diced apples gently.
  • Divide the batter into the muffin cups and bake for 16 to 20 minutes until the tops spring back and a toothpick comes out mostly clean.
  • Let the muffins cool for at least 10 minutes before eating.

Notes

For variation, consider adding chopped nuts, raisins, or chocolate chips. Adjust the sweetener as needed if using applesauce instead of banana.
