  • 1/2 cup vegetable oil Can substitute with melted coconut oil.
  • 1 cup milk For a vegan version, substitute with plant-based milk.
  • 2 large eggs For a vegan version, replace with flax eggs.
  • 1 teaspoon vanilla extract
  • 1 1/2 cups diced apples (about 2 medium apples) Choose apples like Honeycrisp or Granny Smith.
  • 2 tablespoons cinnamon sugar (for topping)

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a large mixing bowl, combine the all-purpose flour, granulated sugar, brown sugar, baking powder, baking soda, ground cinnamon, and salt. Whisk until well combined.
  • In a separate bowl, whisk together the vegetable oil, milk, eggs, and vanilla extract until fully blended.
  • Pour the wet mixture into the dry ingredients and stir gently until just combined. Gradually fold in the diced apples, being careful not to overmix.
  • Evenly distribute the batter into the prepared muffin cups, filling each about two-thirds full. Sprinkle cinnamon sugar on top of each muffin.

Baking

  • Bake in the preheated oven for 18 to 20 minutes or until a toothpick inserted in the center comes out clean.
  • Allow the muffins to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.

Notes

Store any leftover muffins in an airtight container at room temperature for up to 3 days. For longer storage, place them in the refrigerator for up to a week or freeze them for up to 3 months. Reheat in the microwave for 15-20 seconds or in a preheated oven at 350°F for 5-10 minutes.
