Ingredients

Main Ingredients

  • 2 medium grated apples About 2 cups
  • 2 medium grated carrots About 1 cup
  • 3 large eggs
  • 160 g ground oats About 2 cups
  • 80 g ground nuts Such as walnuts or almonds, about ⅓ cup
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 pinch salt

Instructions

Preparation

  • Preheat your oven to 175°C (350°F).
  • Grate the apples and carrots finely and set aside in a large mixing bowl.
  • In another bowl, whisk the eggs until they are light and frothy.
  • In a separate bowl, mix together the ground oats, ground nuts, baking powder, cinnamon, and salt.
  • Combine the dry mixture with the grated apples and carrots, then stir in the beaten eggs until everything is well mixed.
  • Pour the batter into a greased baking pan and spread it evenly.

Baking

  • Bake in the preheated oven for about 35 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the cake cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Ensure the eggs are beaten well for a fluffier cake. You can adjust the spices to your taste; nutmeg or ginger can add a nice touch. Not grating the apples and carrots finely enough can lead to a dense texture. Overbaking can dry out the cake; keep an eye on it during the last few minutes.
