Ingredients

For the Apple Bean Cake

  • 1.5 cups 1 1/2 cups white pea beans (navy beans), soaked and cooked or canned, drained and rinsed (about 300g)
  • 0.5 cups 1/2 cup apple juice (120ml)
  • 1 cup 1 cup vegetable oil (240ml)
  • 3 pieces 3 eggs
  • 2 tsp 2 tsp vanilla extract
  • 1.5 cups 1 1/2 cups cooking apples, peeled and grated (about 3 medium apples)
  • 1.5 cups 1 1/2 cups brown sugar (300g)
  • 3 cups 3 cups all-purpose flour (360g)
  • 2 tsp 2 tsp baking soda
  • 1 tsp 1 tsp ground cinnamon
  • 0.5 tsp 1/2 tsp ground nutmeg
  • 0.5 tsp 1/2 tsp ground cloves
  • 0.25 cups 1/4 cup chopped pecans (about 30g)

For the Warm Cranberry Sauce

  • 2 oranges 2 oranges, zested and juiced
  • 0.5 cups 1/2 cup water (120ml)
  • 0.5 cups 1/2 cup white sugar (100g)
  • 2 cups 2 cups cranberries (about 200g)
  • 2 tbsp 2 tbsp cornstarch
  • 0.25 cups 1/4 cup water (60ml)

Instructions

Preparation

  • Preheat your oven to 350°F (180°C).
  • In a food processor or blender, puree the soaked or canned beans with the apple juice until smooth.
  • Transfer the bean puree to a large mixing bowl. Stir in the eggs, vanilla, grated apples, and vegetable oil until well combined.
  • In a separate bowl, whisk together the brown sugar, flour, baking soda, cinnamon, nutmeg, and cloves.
  • Gently fold the dry ingredients into the wet mixture until just combined.
  • Add the chopped pecans into the batter, mixing gently.
  • Pour the batter into a greased bundt pan, smoothing the top.

Baking

  • Bake for 40-50 minutes, or until a toothpick inserted in the middle comes out clean.
  • Remove the cake from the oven and let it cool for about 15 minutes in the pan before turning it out onto a wire rack to cool completely.

Making the Warm Cranberry Sauce

  • In a medium-sized saucepan over medium heat, combine the orange juice, zest, and 1/2 cup (120ml) of water.
  • Once hot, stir in the white sugar and cranberries.
  • Dissolve the cornstarch in the remaining 1/4 cup (60ml) of water and add it to the saucepan.
  • Simmer over low heat for about one minute, stirring gently until the sauce thickens.
  • Remove from heat and set aside.

Serving

  • Serve warm cranberry sauce over slices of the Apple Bean Cake, and feel free to top it with some whipped cream if you like!

Notes

Store leftover cake in an airtight container at room temperature for up to three days, or in the fridge for about a week. You can also slice and freeze it for later treats! For a vegan version, substitute eggs with flax eggs (1 tbsp ground flaxseed mixed with 2.5 tbsp water) and use plant-based milk instead of apple juice.
