  • 1/4 cup Chopped almonds Provides crunch.
  • 1/4 cup Mini chocolate chips Optional but recommended for added chocolate.
  • 1 pinch Salt Enhances flavors.

Instructions

Preparation

  • In a large bowl, combine shredded coconut, almond butter, honey or maple syrup, cocoa powder, chopped almonds, mini chocolate chips, and salt.
  • Mix well until all ingredients are combined and a sticky mixture forms.
  • If the mixture is too dry, add additional honey or almond butter; if too wet, add cocoa powder or coconut.
  • Chill the mixture in the refrigerator for about 10 minutes if it's too sticky to handle.
  • Using damp hands, roll the mixture into 1-inch balls.

Storage

  • Store in an airtight container in the refrigerator for up to 1 week.
  • For longer storage, freeze on a plate first, then transfer to a bag or container for up to 2 months.

Notes

For a fun presentation, roll in extra shredded coconut or drizzle with melted chocolate before serving. These bites are also customizable with other nut butters or sweeteners.
