Ingredients

For the Cheesecake Filling

  • 8 oz cream cheese, softened About 225 g
  • 1/4 cup powdered sugar About 30 g
  • 1 tsp vanilla extract About 5 ml

For the Egg Rolls

  • 10 pieces egg roll wrappers
  • 1 cup cherry pie filling About 240 g
  • 1 piece egg, beaten or water, for sealing
  • Non-stick cooking spray or melted butter
  • Powdered sugar, optional for garnish
  • Chocolate drizzle, optional for garnish

Instructions

Preparation

  • In a medium-sized bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until the mixture is smooth and creamy.
  • Lay an egg roll wrapper flat on a clean surface, with one corner pointing towards you.
  • Spread 1 to 2 tablespoons of your cheesecake filling in the center of the wrapper. Then, add about 1 tablespoon of cherry pie filling on top of the cheesecake mixture.
  • Fold the bottom corner of the wrapper up over the filling. Next, fold the two side corners inward, and roll it up tightly, sealing the edge with the beaten egg or a bit of water.
  • Repeat this process with the remaining wrappers until you’ve used all the filling.
  • Set your air fryer to preheat at 375 degrees F (about 190 degrees C) for 3 to 5 minutes.
  • Lightly spray or brush the egg rolls with cooking spray or melted butter.

Cooking

  • Place the egg rolls in the air fryer basket in a single layer, making sure they are not touching.
  • Air fry at 375 degrees F (190 degrees C) for 8 to 10 minutes, flipping halfway through, until they are crispy and golden brown.

Serving

  • Let them cool slightly before dusting with powdered sugar or drizzling with chocolate. Serve warm, and enjoy!

Notes

To prevent the filling from leaking, ensure edges are sealed well. Cook in batches for best results. Feel free to experiment with different fruit fillings.
