  • 1/2 cup creamy peanut butter Conventional creamy peanut butter works best for this recipe.
  • 6 tablespoons granulated sugar Use 5 tablespoons for less sweetness.
  • 1 large egg yolk You can use 1 whole small egg, but cookies will be cakier.

Optional Extras

  • 1 pinch salt If your peanut butter is unsalted.
  • 1 splash vanilla For added aroma.
  • 1-2 teaspoons flaky sea salt For topping after baking.

Instructions

Preparation

  • Heat your oven to 350°F and line a baking sheet with parchment.
  • In a medium bowl, stir together the peanut butter and sugar until smooth.
  • Add the egg yolk and stir until the dough is thick and cohesive.
  • If the dough feels too soft, let it rest for 3 to 4 minutes to firm up.

Shaping and Baking

  • Scoop 1 and 1/2 tablespoon mounds of dough, roll into balls, and place on the baking sheet.
  • Press gently with a fork in a crisscross pattern to flatten to about 1/2 inch thick.
  • Bake for 8 to 10 minutes, until the edges look set with tiny cracks on top.
  • Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

Store in an airtight container for 3 to 4 days at room temperature. For longer storage, freeze baked cookies for up to 2 months or freeze dough before baking.
