Instructions

Preparation

  • Preheat your oven to 175°C (350°F) and line a baking tray with parchment paper.
  • Peel, core, and chop the apples into roughly 1 cm (1/2 inch) pieces for even cooking.
  • In a frying pan over medium heat, melt 2 tablespoons of butter. Add the chopped apples, 1/4 cup of sugar, cinnamon, and lemon juice. Stir gently and cook for 5–7 minutes until apples are softened but still hold their shape. Remove from heat and let cool completely.

Mixing Dough

  • In a large bowl, beat 2 large eggs with softened 7 tablespoons of butter, 1/2 cup of sugar, and vanilla sugar or extract until creamy and smooth.
  • In a separate bowl, whisk together flour, 1 tablespoon of baking powder, and a pinch of salt, then gradually add this dry mix to the wet ingredients. Stir until just combined and the dough is thick and spoonable.

Combining

  • Fold the cooled apple mixture evenly into the dough, mixing gently to maintain chunks.
  • Using a spoon, drop dollops of dough onto the prepared tray, spacing each about 3 cm (1 inch) apart to prevent spreading.

Baking

  • Bake in your preheated oven for 15–20 minutes, until cookies are golden on top. Check doneness by inserting a toothpick—it should come out clean or with just a few moist crumbs.
  • Let the cookies cool on the tray for 5 minutes before transferring them to a wire rack to cool completely.
